What is the papering thing I have seen red yellow blue what is that exactly?

Stallions and Mares can be evaluated based on their breeding ability and Papered if you have an upgraded account.

For stallions, papers go from lowest to highest:
Showable Only, C, B, A, *Star

Mares go
Failed, Yellow, Red, Blue, *Gold

Most foundations (the horses you can create on the Create A Horse page) will Paper C or Yellow. In general, the paper levels will roughly correspond to each other--C and Yellow are about the same, B and Red, A and Blue, etc.

In general you have a better chance of breeding foals that will pass testing intact if you breed horses of similar breeding quality to each other. However, there is a range of breeding abilities in each Paper level so if takes some experimentation and luck to get intact foals.

Many players are breeding for increased breeding quality in each generation and will cull breeding horses if they don't Paper right for their goals.

Oh--breeding ability and showing ability are unrelated in an individual horse! Lots of horses that are bad breeders are awesome show ponies or vice versa. Some are great at both, and, like real life, some are just lemons and bad at everything...

Have you checked the foundation rescue (put 13 in the owner box of the horse search). It is an automated account that saves all perfect foundations without foals that are sold back to the game through the public auction. All their horses are the best breeders that ordinary foundations can be, have a PT of 9.9 and are perfectly consistent. There are a lot of plain bays and chestnuts, but there are sometimes other colors, and they get new horses in after every auction.

@wendolyne, if you look at Star Strike's page, they have not logged in to their HJ account since the end of April so they aren't actively playing right now. I doubt you'll get a response.
