which upgrade is better? If I get the premium do I get all the basic upgrade things too? Do I have to get both to get everything? Can I get everything?

The premium upgrade opens everything for you. Welcome to the game--it is amazing and so much fun.
A few suggestions--breeding season starts up again a in a few days. You might try buying a few mares from the foundation rescue (search horses on the left menu, when you get there click "for sale" and in the Owner ID box put 13. Every single horse in foundation rescue is a "perfect foundation" meaning that it has the best possible breeding and showing ability for a foundation horse. A few top mares will help you a lot with your breeding.
Remember to train and show your horses weekly. This is you best way to make money in the game. Horses can be trained once a week and shown twice, with weekly rollover on Sunday.

Cheers mentioned training, I'll just mention, if you get the premium upgrade, your horses train automatically and you can also have them show automatically. If you think you'll invest time in the game it's totally worth it.
Also, don't sit quietly, ask questions! Everyone around here is super helpful and it takes a bit to learn the ropes.
You joined in the couple of day lull between breeding seasons, so hold tight till the 2nd, then things start to really happen. Meanwhile, I suggest you look at horses to create or buy. Take advantage of shared Daily Herd Helpers (DHH or HH), and visit the auction house tomorrow when the auction runs, and do check out foundation rescue as suggested above.

Herd Helpers allow you to breed specifically colored horses, or sometimes horses that will be perfect foundations (top breeding and showing ability), great show horses or top notch producers (top breeders). Higher ranked HHs either provide rarer genes or control for more genes (guaranteeing a narrower range of colors and patterns) but do not guarantee a better breeding or showing horse unless specifically stated.
For special events, or rarely on the daily lottery, Rank Special herd helpers come up. For special events everyone gets one create. These horses are always perfect foundations no matter what color they are, plus they often contain rare genes or even genes that you normally have to buy specially, so rank specials are often quite valuable.
On your Create A Horse page you will get a random herd helper every day at roll over. You can share those on the Herd helper page of the forum and try to catch those other people are sharing as well. The lower level HHs give you a ton of creates and shares, while the higher levels give you very few creates and shares. There is a create bonus for whoever "owns" the HH, so they get more creates for themselves every time the helper is shared. -
