What to replace
-
Out of my pasture breeding and barn breedings I only came out with 2 decent foals. Which I kept. Should I replace the mares or stallions? Or give it another shot next season and see what happens?

Sometimes people have bad seasons, but it depends on what you did.
For your pasture mares, were they at 30days?
Did you match ability? Eg. yellow-C, red-B.Producer of Volcanic Glass Drafts. Lapisobsidianus.

Not all were at 30 days. I matched the best that I could.

Like I said, sometimes you have bad seasons. If the mares keep on giving you dubs (I believe that in the old papering, where a mare has to have 3 foals on the ground, people judged a mare's quality by it's 3-5 foals that it has had) then spay them.
Please note that that is for horses whose breeding ability you don't know. RS, PF and the like, you KNOW for a fact that they're good.
