I know she may not be a great breeder if I unalter her, and I'd hate to lose her showing bonus if she does end up being a dud in the barn. Would it be worth it to unalter to test a few foals and see what happens?~☼~Welcome to Oak Branch Stables

Nope, you can always try the breeding again next season. She is a backstep in quality. A GMT to unalter is a lot to spend on a foal like her that is easily replaced.
