Owner notes and different kinds of sooty

Hello HJ enthusiasts, I am just starting out on my journey to breed outstanding horses and have amazing awards to show for it ;) . I will probably have a lot of questions, and I already got a lot of questions answered through looking here. However I was not able to find an answer to these two:
How do you create owner notes on your horses? I cannot figure it out...
What is the difference between the multiple versions of sooty? S, SSty and S+ ? S recessive SSty dominant? But what about S+?

Owner notes are located on the control panel tab of the horses page.
S+ is even more sooty usually with a dappled effect. Playing with the search is the best tool for figuring out differences. You can see how changing one or two (or all) genes affect the horses -
S = no sooty
Sty = sooty
So if a horse has stysty means it’s homozygous and will always pass sooty on to foals
If it’s SS means it will never pass sooty on
And if it has 1 S and 1 sty means it’s hetrozygous and has 50% chance of passing either sooty or no sooty onBreeding liver chestnut drafts that carry snowflake and kp.
Also breeder of mushroom, watercolour, chinchilla, splash m, wrong warp and thunderstruck.
Horses generally always available.

The "Edit Notes" button is screaming at me from the control panel. I have looked there before asking and my brain must have totally spaced out, because I did not see it...
