Just a couple of questions.

I have notice that I cannot shoe any of my mares that are in Pasture. What is the best thing to do? Also How many of each, studs mares and show horses are the best to keep?

You cannot show a horse in pasture. It's a trade off for having improved breeding chances. You should be relying on altered show horses for points anyway.Producer of Volcanic Glass Drafts. Lapisobsidianus.

As to how many neuters vs. intacts, I have seen two answers, although I don't live up to either of them myself.
For a long time, it was commonly recommended that a player have three neutered show horses for every intact horse in the stable. More recently, I have seen Ammit post that the ideal ratio is 10 neuters for every intact horse.
Both of these are based on the fact that neutered horses have a training advantage, which I have primarily seen in the fact that they are generally a year older than intacts when they level off. This is the time when horses in the game stop adding a significant amount to their show score with training.
As for stallions and mares, since a stallion can cover 50 mares in a game year, it's more sensible to keep more mares than stallions.
My own practice is to hoard most of my horses, created or bred. I've been playing this version of the game since October of 2013 and currently have over 2400 horses in my stable. They bring me a showing bonus just over 78,000 hbs daily, which allows me to do almost anything I want in the game. :D

It has more to do that they don't cost you money every year trying to breed them.
