They're frozen and stored in cold storage until used, they're just fine even if the mare has died :-)

Under the "Advanced Facilities" category, you click on the link to go to "Adv. Breeding Lab".

Depending on what you want to do, you follow the directions of each category: Collect Straws | Use A Straw | Sell Straw/Egg | Create Embryo | Sell Embryo | View Embryos | Implant Embryos | Collect Eggs

If you want to see how many eggs or straws you have, you can go to the "Sell Straw/Egg" and look at what is in your freezer.

Sometimes the "has a total of __ straws/eggs." doesn't show. You can click the drop down menu and it lists the total number of straws/eggs you have in parenthesizes.

Otherwise you might check your embryos and see if three of the eggs were used to create embryos that haven't been implanted yet.
