New here. Working my way through the forums. Having a lot of fun so far and probably making a ton of mistakes. I have many questions, but the one that is foremost on my mind now is - if I have multiple mares and stallions in a pasture - who breeds with whom, or is it random and I am better off to have multiple small pastures with 1 stallion in each?

Which stallion breeds which mare is random, but the division is usually about half and half, but not always exactly so. One stallion might breed 35 mares in a 60 acre pasture and the other one 25, for instance.
I do both, depending on circumstances. For instance, in HaJ1, I own two Axiom stallions. I put them in a 60 acre pasture with 60 mares. That way they both got about equal opportunity to pass on their genes.
I also, both here and in Haj1, have quite a few 10 acre pastures, each one devoted to starting and then continuing a small color line. I very seldom have 3 stallions and 100 mares in my 100 acre pastures. I have, however used them successfully to breed my exceptional cross lined horses.De gustibus non disputandum.
