I've been trying to look around and see what exactly the "profit" is. Some of my horses have a negative profit. Is this what is lost from the shows? Or lost from entering in a show and you don't make a profit off it?

You don't really need to keep track of profit or loss from showing. See if this helps: http://hj2.huntandjump.com/forum/discussion/9681/general-information-showing-and-levels#Item_4 Especially the second half.
