You can only use your own stallions in the pasture. You will have to remove them to breed to an outside stud.

I'll still use Rank 1-3 if it's a colour or pattern I want. For example, Dark Chestnut is Rank 1 but I still use them for Livers.

They will have the full grown "look" at 2. Horses age every month, so your yearlings will grow up November 1. Seeing the change is one of my favourite parts of the game!
